Antoinetta Anselmo
Antoinetta discovered her love for food when she started working in a local restaurant at the age of 14. She continued to work in the restaurant industry for 11 years where she did everything from cooking, to serving to bartending. She became interested in nutrition at the age of 21 when she decided to start going to the gym to work out with a trainer. Her trainer introduced calorie counting into her life to help with her weight loss goals. It was at that time where she discovered her love for nutrition, and started reading more and more books to learn how to eat healthy. She decided, since she enjoyed learning so much about nutrition, to go to school at Arizona State University where she earned her degree with a Bachelor of Science in Nutrition and graduated with honors in 2004. After graduation she started working at Banner Baywood Medical Center as a dietetic technician to gain experience in a hospital setting. She went through an internship program with Maricopa County's Office of Nutrition Services and became a dietitian in 2007. After her internship Antoinetta decided to go to culinary school at Scottsdale Community College, and earned a certificate in Culinary Arts while working in a weight loss clinic counseling clients on healthy eating and exercise. Currently Antoinetta works at Maricopa Integrated Health Systems in a hospital setting as a clinical dietitian. There she does the nutrition analysis for the hospital foods, and also provides clinical nutrition care. Duties include diet educations, and nutrition recommendations for critically ill patients in the Intensive Care Unit. She also had the great opportunity to teach nutrition classes at the Scottsdale Culinary Institute providing culinary students with basic knowledge of nutrition. With her eagerness to inform and educate the community Antoinetta also found her passion for the Spanish language. Although her Spanish is not perfect, she is able to effectively communicate and teach nutrition in Spanish. This ability has opened many doors including the opportunity to make a commercial on Spanish radio for the Pork Council of Arizona, and volunteering in Argentina teaching nutrition to the community. Now working with NutritionAnalysis.com Antoinetta is able to use her knowledge of special diets, experience in menu analysis, and love for food to provide nutrition information to the public.
